Chicken Zucchini Pesto

1 zucchini

3-4oz chicken breast

1T homemade pesto*

Use a handheld vegetable spiralizer to create “zoodles” out of zucchini.  Chicken should be cooked ahead…(but you have food prepped this weekend, right?)

Put 1tablespoon pesto in a saute pan on medium low, add a spritz of coconut oil spray if pesto is sticking to pan.  Add zoodles and chicken.  Toss until zucchini noodles are to desired texture, 4-5 minutes.

 

*Homemade pesto:

2 cups fresh basil

1/2 cup Romano/Parmesan blend

1/2 cup extra virgin olive oil

1/3 cup pine nuts, macadamia nuts, or pecans

3 garlic cloves, minced

salt and pepper to taste
